Words of the Week

"Cracklin' Bread" - Traditional cornbread with pork cracklings added to the batter before baking. Pork Cracklings are fried pieces of pork skin, that add meatiness and a salty flavor to the cornbread.

"Pot Liquor" - The juices that remain in the bottom of the pot after cooking greens, red beans or any slow cooked dish. This is infused with all of the flavor of the dish and is perfect for dipping cornbread, biscuits or rolls. Or if you are a hardcore Foodie, eating all by itself.
